Lemon custard: silken tofu does the trick.

Quickest lemon custard – you need 2 minutes and a blender and you can enjoy it! It is vegan and refined sugar free, contains a little bit of maple syrup and has this amazing sweet lemon taste. It is important to use silken tofu and not a regular tofu – because you will get a soft, pudding-like structure using it. Silken tofu contains a lot of protein, so if you are vegan and struggling with reaching your protein goals during the day this recipe is definitely for you. Lemon juice and a zest make it very aromatic – be aware of the fact that you can only use the yellow part of the zest – do not grate the lemon till the zest gets white. This can make your dessert bitter.

Lemon custard recipe

You can prepare it in advance and keep it in the fridge for 2 or 3 days. It is perfect with homemade granola (check my recipe, if you do not know it). Making this lemonsweet custard and topping it with granola is the best soft and crunchy afternoon snack.

Ingredients
  

  • 340 g silken tofu
  • 40 g coconut grated coconut
  • 60 g maple syrup
  • zest of one lemon
  • 5 tbsp lemon juice

Instructions

  • Combine 340 g silken tofu and 40 g coconut grated coconut in a blender. Add 60 g maple syrup and 5 tbsp lemon juice and blend again. Add zest of one lemon* and mix with a spoon.
