You can bake it on the weekend, place it in the fridge and enjoy it during the week. It is light, cheesy and perfect with a huge salad. The ingredients are also very simple and if you have got the cauliflower, you can definitely find some cheese and sour cream in your fridge. The onions that are fried before, give the dish an extra taste – do not leave them out.

Cauliflower bake is very easy to make and has 17 g of healthy protein. It is also super low calorie with only 298 calories per serving. Prepare it in advance for the busy week to have a great lunch or dinner ready in 10 mins.

Ingredients
  

  • 650 g cauliflower florets
  • 130 g sour cream 15%-20% fat
  • 4 eggs
  • 130 g grated cheese
  • 2 small onions
  • 1 olive oil
  • 6 g salt

Instructions

  • Preheat the oven to 180 C or 355 F.
  • Wash cauliflower and cut off the florets. If the florets are too big, cut them into halves. You should have around 650 g. Bring a pot of water to the boil and add 6 g of salt. Add 650 cauliflower florets and cook for 5 minutes.
  • Chop 2 small onions into pieces. Heat olive oil in the pan and saute onions until they come golden brown. It takes around 5-6 minutes.
  • Drain cauliflower florets. In a large bowl mix 130 g sour cream, 4 eggs, 130 grated cheese and sauteéd onions. Add cooked cauliflower florets and mix everything.
  • Lightly oil a baking tin and pour cauliflower cheese into the baking tin. Bake for 35-45 minutes at 180 C or 355 F. Check cauliflower before taking cheese cauliflower out of the oven – it should be cooked through. Everybody’s oven is different, so it could take longer or shorter to bake – just taste the cauliflower and once it is baked through you can take it out.
