Cilantro lime rice – stop eating boring rice

This recipe adds a lot of flavor, taste and deliciousness to rice. It is fresh and citrusy, because of lime juice and lime zest and full of green-tasting flavor because of cilantro.

It is perfect for mealprep (check my recipes that you use for mealprep here), so you can make it on the weekend and enjoy during the week – combining it with other side dishes – like tofu, cheese, guacamole or a nice bean dip. To make rice aromatic it is important to cook it under the closed lid, after the water starts to boil – do not open the lid, there is enough water for rice to cook and you will be amazed about the result. After removing rice from heat, leave it for 10-15 minutes to cook till the end under the closed lid – this will make your rice cook through under the steam that comes from the bottom.

If you like fluffy rice, you can add 1 tbsp of olive oil after the water starts to boil, stir and reduce the heat. Adding olive oil is optional, it depends on what kind of rice you like – sticky or fluffy.

Ingredients
  

  • 200 g of brown rice
  • ½ tsp salt
  • 500 g of water
  • Zest 1 lime 1 tsp*
  • 15 g lime juice
  • 15 g cilantro
  • optional: 1 tbsp olive oil to make rice fluffy

Instructions

  • Rinse the rice at least 5 times until the water is clean. Add the washed and drained rice to the boiling salted water (½ tsp salt)*. After boiling add 1 tbsp of olive oil (this is optional, only if you want to have fluffy rice, not sticky rice) stir, reduce the temperature to the minimum, cover and cook for 30-35 minutes without opening the lid. Quickly open, try the rice on readiness, close the lid. Set aside and leave for 10-15 minutes.
  • Open and mix gently with a fork.
  • Add zest of one lime*, 15 g of lime juice and 15 g of cilantro to the rice.
