Easy & essential pasta recipe

A good pasta recipe is very important if you want to make a quick healthy lunch or dinner. To prepare this recipe you just need around 30-40 minutes and very simple ingredients. It is a great vegetarian dish that has a lot of texture – the texture comes from champignons and carrots. The best is that you cook pasta in its own sauce – you do not need to drain the water after cooking and you get a very creamy sauce and pasta as a result.

I love adding champignons to vegetarian dishes – they are filling, have kind of meaty texture you miss, if you do not eat meat and the most important thing is that the amount of protein they contain is always underestimated. 100g of champignons contain 3 g of protein and only 22 calories. It is amazing to add them to pasta, rice or salty crepes (check my recipe for crepes here) if you want to feel full and eat more vegetarian protein.

This pasta recipe is simple because of its ingredients and easy preparation but still gives you incredibly tasty results – low in calories and high in protein.

Ingredients
  

  • 200 g tagliatelle
  • 200 g carrots grated on a large grater
  • 100 g finely chopped onions
  • 800 g champignons
  • 70 g cream cheese
  • 25 g oil
  • 10 g salt
  • 2 g of black pepper
  • 600-700 g hot water

Instructions

  • The dish is prepared in one pan, which is very convenient. I cooked in a pan with a diameter of 28 cm. If the pan is smaller, you need to recount the ingredients of the recipe.
  • Pour 10 g of oil into the pan and add the mushrooms, cut in half or quarters, cook at high heat until all the liquid has evaporated and the mushrooms are slightly browned. The process takes 15-20 minutes. Put the mushrooms in another bowl.
  • In the same pan pour 15 g of oil, add 100 g of chopped onion, cook for a few minutes, add 200 g of grated carrots, simmer for about 10-15 minutes until half-cooked.
  • Add fried mushrooms to the carrots, pour 600-700 g hot water*, add 10 g of salt and 2 g of pepper, boil for 5 minutes and put 200 g tagliatelle (uncooked) into the pan, spread the tagliatelle nests evenly. Cover with a lid and cook the pasta until half-cooked*. Add the 70 g of cream cheese and carefully combine with the water.
  • Cover with a lid, cook until al dente.
