Healthy cheesecake: firm, creamy & chocolate inside
Healthy cheesecake is firm, creamy and has pieces of chocolate inside. It is like cheesecake stracciatella cake – subtle chocolate inside of rich cheesecake. Once your cake is ready the chocolate inside is melted and very soft. If you put it in the fridge for some time the chocolate hardens and the pieces are strong and crunchy – both versions are incredibly tasty.
The cake is very low in sugar – it has a little bit of vanilla sugar and maple syrup inside – but its taste comes from natural sweetness and delicious combination of chocolate and creamy quark. Every piece of this cake contains 13 g protein – without adding protein powder – protein comes from natural ingredients and this makes it a perfect as an afternoon snack, if you struggle to reach your protein goals during the day.

Ingredients
- 800 g cottage cheese 0-10% fat
- 60 g maple syrup
- 8 g vanilla sugar
- ½ tsp salt
- 170 g sour cream 10% fat
- 4 eggs
- 40 g cornstarch
- 80 g dark chocolate cut into small pieces
Cheesecake topping
- 300 g sour cream 20-25% fat
- 1 egg
- 20 g maple sirup
- 20 g cocoa powder
- 20 g cornstarch
Instructions
- Turn on the oven to reach 150C (or 302F) before you put a healthy chocolate cheesecake inside.*
- Combine 800g cottage cheese*, 4 eggs, 170g sour cream 10% fat, ½ tsp salt, 8g vanilla sugar, 40 g cornstarch and 60 g maple syrup in a large bowl. Mix everything and add 80 g of dark chocolate*.
- Pour into the baking form and bake at 150C (302F) for forty minutes.
Prepare cheesecake topping
- Mix together 300 g sour cream 20-25% fat*, 1 egg, 20 g maple syrup, 20 g cocoa powder and 20 g cornstarch. After 40 minutes at 150 C (302F) take chocolate cheesecake out of the oven and pour cheesecake topping on it. Put it again into the oven for 20 minutes at 160 C (320F).
- Turn off the oven, open the door and keep chocolate cheesecake without cutting it in the oven during the next 60 minutes*. After this your chocolate, high protein cheesecake is ready to enjoy!
- This healthy chocolate cheesecake with all the ingredients above makes 12 big pieces. It is low calorie (240 calories per piece), high in protein (13g) and has no refined sugar inside.

Tips & hacks for the recipe
*You can take cottage cheese with 0%-10% fat depending on your taste and health goals. Cottage cheese with a higher percentage of fat is higher in calories.
*Turn on the oven beforehand to have a temperature at 160C (or 302F) when you put a chocolate cheesecake inside. If you put a cake in an oven that is not heated to this temperature, it could take longer or not reach the desired structure.
*Use dark chocolate, if you like the taste of it or milk chocolate if you like your cheesecake sweeter. It is important to finely cut chocolate into pieces to spread them inside of the chocolate cheesecake cake.
*It is important to use sour cream with a higher percentage of fat for cheesecake topping. It will give it a creamy chocolate structure.
*Do not take chocolate cheesecake out of the oven before it cools down for 1 hour. It is going to have an amazing cheesecake structure.
