Healthy ice cream – 4 ingrediens for great taste
This recipe consists of only 4 ingredients – apricots, cream cheese, maple syrup and oat milk. No refined sugar, no flavor enhancers or strange ingredients you never heard of. If you do not have any fresh apricots, you can use frozen apricots – this will save you the time you need to freeze the fruit. If the apricots are sweet there is no need to add a lot of maple syrup – I just added a little bit to make an ice cream a little bit sweeter. Adjust it to your taste – how sweet you would love to have an ice cream – add more maple syrup, if you like really sweet ice cream.
The apricots are cut in halves and frozen and it can be a challenge to blend them into the smooth ice cream structure. So I blend them and mix with a spoon – a lot of frozen apricot parts stay in the upper half of a blender and do not blend in. So I mix with a spoon to make sure even these parts are combined to an ice cream. Blend and mix with a spoon several times – till you get the mixture that is smooth and ice cream like.

- 100 frozen apricots
- 20 g cream cheese
- 4 g maple syrup
- 10 g oat milk
Instructions
- Wash and cut apricots in halves. Remove stones and freeze the apricots. Once they are frozen – put them in a blender, add 20 g cream cheese, 4g maple syrup* and 10 g of oat milk. Blend.
- The apricots are frozen and it can be difficult to blend them. To make it easier to blend, take a spoon and mix, so the parts of frozen apricots, that did not blend in, can be blended. Mix and blend, mix and blend – do it several times, so you get a smooth ice cream structure.
