Healthy pancake: great low calorie dessert

These low calorie pancakes turn out very soft – in combination with the melted chocolate they make a great dessert.
This recipe is high in protein – if you are struggling with consuming enough protein during the day – add some quark cheese on top and you have a perfect high protein snack.
It is very important to leave the mixture for 10-15 minutes after mixing – let the ingredients set for extra softness and an amazing taste. Bake these pancakes without oil – save the calories and enjoy an amazing taste without any oil.

A healthy pancake with melted chocolate is such a delicious sweet snack – it is a perfect breakfast on the weekend or an amazing meal prep recipe, that you can make and enjoy later during the busy week.

Ingredients
  

  • 250 g kefir it should be room temperature*
  • 1 egg
  • 1 egg white
  • 10 g maple syrup
  • 10 g oil 1 tablespoon
  • 2 g salt ¼ teaspoon
  • 4 g vanilla sugar
  • 150 g flour
  • 4 g baking soda ½ teaspoons

Topping:

  • 10 g chocolate
  • 10 g oat milk

Instructions

  • Mix together 250 g of kefir (it should be room temperature)*, 1 egg + 1 egg white, 10 g of maple syrup, 10 g oil (1 tablespoon), 2 g salt (¼ teaspoon) and 4 g of vanilla sugar.
  • In a separate bowl sift 150 g of flour and add 4 g of baking soda (½ teaspoons).
  • Add the dry mixture to the liquid mixture, stir with a whisk. Leave for 5-10 minutes.
  • Put the pan on medium heat and warm it up for 5 minutes. Out of the mixture you will get 3 large pancakes. Bake in a dry pan without adding oil. Pour the mixture into the center of the pan. Wait for the appearance of bubbles on the one side, carefully turn over, cook until ready.
  • For topping, warm up a pan with hot water and place a bowl with 10 g of oat milk and 10 g of dark chocolate over it. Mix and wait till half of the chocolate melts and turn off the heat. Keep mixing till all the chocolate melts. Pour over pancakes.

Tipps

*Before using, take kefir out of the fridge. It should be at room temperature, when you use it. With cold kefir, you will not get fluffy pancakes.
