Low in calories & high in nutrition and energy!

This bowl is super high in nutrients and low in calories. It contains beets, sweet potato, feta cheese and green salad. These veggies fight inflammation, increase our energy levels and improve digestion. The bowl contains a lot of fiber, which is amazing to feed our gut friendly bacteria and this improves our skin, helps to lose weight and elevates energy levels. The veggies in this bowl are very low in calories, but they contain a lot of volume and this makes you feel full for a longer period of time. At the same time you consume less calories. And all these veggies are not only healthy they are full of flavor – incredibly delicious. I hate dull healthy recipes!

The preparation is pretty simple – there is no need to peel the vegetables. I wash them and scrub. This way all the dirt is removed. The baking time is also pretty short and you can prepare a salad, dressing and whipped feta during baking.

Ingredients
  

Veggies:

  • 130 g potatoes 3 g of oil, ¼ tsp black pepper*
  • 150 g beets 3 g of oil, ¼ tsp. black pepper, ¼ tsp. coriander*
  • 100 g sweet potato 3 g oil, ¼ tsp. dry garlic, ¼ tsp. black pepper, ¼ tsp. paprika*

Whipped feta:

  • 140 g feta
  • 35 g greek yogurt
  • 15 g honey
  • 2 g garlic

Salad:

  • 120 g salad
  • 50 g arugula

Salad dressing:

  • 6 g olive oil
  • 20 g balsamico
  • 16 g honey

Instructions

  • Veggies: Wash 130 g of potatoes, 100 g sweet potatoes and 150g beets well. It is not necessary to peel the vegetables. You can leave the skin on and scrub to make them very clean. Cut into circles about 5 mm thick.
  • Add 3 g of oil, ¼ tsp black pepper to potatoes, mix well
  • Add 3 g of oil to beets, ¼ tsp. black pepper, ¼ tsp. coriander, mix well
  • Add 3 g of oil to the sweet potato, ¼ tsp. dry garlic, ¼ tsp. black pepper, ¼ tsp. paprika, mix well
  • Place on baking paper, bake at 200 C / 390 F for 30-40 minutes.
  • For whipped feta blend in a blender: 140 g feta, 35 g greek yogurt, 15 g honey and 2 g garlic.
  • Wash salad and arugula.
  • Arrange on a plate: salad, whipped feta and roasted veggies.

Tips

*I did not put any salt on veggies, because whipped feta is pretty salty. No need to add more salt.
