Healthy ice cream: crunchy layers & smooth vanilla

Ice cream with thin and crispy chocolate layers is a perfect dessert. It has a classic vanilla taste, which can be reached with only 3 ingredients. Frozen bananas can be difficult to blend: if you have difficulties blending bananas in a blender, add some oat milk. But the best way to do it without adding any liquid is to blend the frozen banana with other ingredients, turning off the blender and mixing with a spoon. I need 3-4 mixings to reach the perfect consistency. You can also prepare this ice cream without any chocolate – it tastes amazing on its own.

The chocolate layers are done very quickly and they need 1 hours in the freezer to harden and then you can use them.

Ingredients
  

  • 300 g frozen bananas
  • 60 g cream cheese
  • 12 g vanilla sugar
  • oat milk optional
  • 50 g dark chocolate 70% of cocoa or higher

Instructions

Let’s start with preparing the baking paper for thin chocolate layers.

  • Take a form, in which you plan to prepare the ice cream (mine is 16 X 9 cm).
  • Cut the baking paper (it should have the length of your form minus 1 cm).
  • My form is 16 X 9 cm and I cut a 15 cm wide baking paper, cut the width and leave the length as it is. My baking paper turns out to be 15 X 40 cm. Place the paper into the form and fold it several times (as in the video).

Let us melt the chocolate.

  • This recipe requires 50 g of chocolate (cocoa % should be 70% or higher). But I always freeze more chocolate and use it for other recipes. It is very convenient – try it out.
  • There are many ways to melt chocolate. You can use my method or your own.
  • Let me share how I do it.
  • I break the chocolate into pieces, put them in a plastic bag (not thin). I put the chocolate in the corner of the bag and tie it on top. Then I pour boiling water into a small container, let it cool a little bit (2 minutes) and melt the chocolate in the bag in this water, alternately put it in and take it out, then knead it with your hands so that no pieces remain and the chocolate does not turn. When the chocolate has completely melted, I cut a small hole of about 2 mm on the corner of the bag (important: the hole must be very small, and the chocolate has to be completely melted.)

Prepare thin chocolate layers

  • We are making 4 thin chocolate layers out of 50 g of chocolate.

Put the baking paper in the form.

  • After melting the chocolate, pour a very thin chocolate layer on the baking paper in the form. Distribute the chocolate around the paper (with a spatula) – the layer should be really thin. Fold the paper over the chocolate layer and pour melted chocolate over the paper again. Distribute with spatula and fold the paper over it. Fold again and create one more layer of chocolate. Create layers – till you have no melted chocolate left.
  • Take the form with folded baking paper with chocolate layers and put it in the freezer. Chocolate sticks to the paper, but after freezing, the paper can be easily removed. It takes around 1 hour for chocolate layers in the freezer to freeze.

Prepare the ice cream

  • Blend in a blender 300 g frozen bananas, 60 g cream cheese and 12 g vanilla sugar. To blend everything together, turn off a blender and mix with a spoon. Do it several times – blend and mix with a spoon – the parts of frozen bananas that did not blend will be mixed and you can reach a perfect consistency. Add some oat milk, if it is too difficult to blend the ice cream.

  • Take chocolate layers out of the freezer and place the first layer in the form. Pour and distribute vanilla ice cream over it. Put the second layer and distribute some vanilla ice cream over it. One more chocolate layer and vanilla ice cream. Turn the form around and transform the ice cream into the plate. Cut into 3 servings. Enjoy!
