Veggie burger – crispy & healthy
For this delicious burger I am using halloumi cheese – it is high in protein, soy free and perfect if you want to prepare a vegetarian burger. The sauce consists of greek yogurt, which is also rich in protein and is a healthy alternative to mayonnaise. It also has less calories in comparison to mayonnaise.
I really like crispy patties in a burger – and normally they are prepared with meat. Swapping meat for cheese and covering it with crispy cornflake breading is incredibly easy and delicious. While the cheese in a patty melts inside and outside you have this crispy breading – a perfect patty for a burger.

To make the breading extra crispy it is best to use corn flakes that are crushed in a blender. One important thing to look for are the ingredients in the cornflakes you are using. They should not be sweet and contain any sugar – if not the breading could not work.

Ingredients
- A piece of halloumi mine is around 75 g
- 30 g tomatoes
- 30 g salad
- 20 g red onions
- 20 g pickled cucumbers
- 1 Burger Bun
- a piece of cheddar cheese
For Breading
- 5 g of flour
- 1 egg
- 10 g of cornflakes unsweetened crushed in a blender
Sauce
- 50 g greek yogurt
- 1 tbsp lemon juice
- ⅛ tsp garlic
- ¼ tsp chilli powder
- ¼ tsp dijon mustard
Instructions
- Prepare the sauce first: mix 50 g greek yogurt, 1 tbsp lemon juice, ⅛ tsp garlic, ¼ tsp chilli powder and ¼ tsp dijon mustard.
- Crush 10 g of cornflakes (unsweetened) in a blender.
- Put halloumi in the flour, then in the egg, then in the crushed cornflakes. Fry on medium heat under the lid until ready.
- Warm a burger bun in a pan: put it on a pan (without oil) cover with a lid and let it toast on a medium heat. Turn on the other side and toast. Once a burger bun is toasted spread some sauce on a bun bottom and put a piece of cheese on it. Cover with a lid and wait till the cheese melts. Remove burger buns from the pan and add halloumi, tomatoes, pickled cucumbers, salad, and red onions. Pour the rest of the sauce over it and set the bun tops in place.
