Rinse the rice at least 5 times until the water is clean. Add the washed and drained rice to the boiling salted water (½ tsp salt)*. After boiling add 1 tbsp of olive oil (this is optional, only if you want to have fluffy rice, not sticky rice) stir, reduce the temperature to the minimum, cover and cook for 30-35 minutes without opening the lid. Quickly open, try the rice on readiness, close the lid. Set aside and leave for 10-15 minutes.
Open and mix gently with a fork.
Add zest of one lime*, 15 g of lime juice and 15 g of cilantro to the rice.
