Healthy banana bread is the best afternoon snack, if you are craving something sweet and do not want to consume refined sugar. The sweetness comes from bananas, and it is pure natural sugar. It is very important to use over ripe bananas – the riper bananas, the sweeter is the banana bread. You can buy some bananas in advance and let them ripe or just use bananas you have at home as soon as they go brown. I really love adding walnuts to it – chopped, they give it so much flavor and add crunchiness to the texture. The raisins are also amazing to add, they give banana bread even more natural sweetness. Cocoa nibs are perfect for banana bread – they give so much chocolate flavor, but at the same time the taste of bananas is preserved and chocolate does not dominate.

This banana bread is so soft and has a perfect texture. I am using whole grain flavor to add more fiber to it and greek yogurt to make it really soft without using any oil. If you like really sweet cakes, you can add some maple syrup to this banana bread to make it a little bit sweeter. But, as I mentioned, using ripe bananas is enough to make it just sweet enough.

Ingredients
  

  • 500 g over ripe bananas 3 medium bananas*
  • 3 eggs
  • 200 g greek yogurt 10% fat
  • 200 g whole wheat flour
  • 10 g baking powder
  • tsp salt
  • 50 g raisins
  • 50 g walnuts
  • 30 g cocoa nibs substitute for chocolate chips, if you do not have it

Instructions

  • Peel 500 g of over ripe bananas. The riper the bananas, the sweeter your banana bread is going to be. Mash them with a fork.
  • Add ⅓ tsp of salt to 3 eggs and mix. Then add 200 g of greek yogurt (10% fat) and mix. Add mashed bananas and mix. Add 200 g of whole wheat flour and 10 g of baking powder. Mix. Chop 50 g of walnuts.
  • Add 50 g of raisins, 50 g of chopped walnuts and 30 g of cocoa nibs.
  • Put the mixture in a baking form, bake at a temperature of 180C / 355F for 60 minutes.
