This healthy chocolate cookie recipe makes 10 cookies. You can have them as a perfect snack before your workout, since they will give you a perfect energy kick for your workout. At this time they are perfect snack, if you love cookies, but want to eat healthier and consume less sugar
No butter and refined sugar
Chocolate chip cookies are one of my biggest weaknesses. I really loved to enjoy them during my pregnancy. However, as I wanted to lose the baby weight after my daughter was born and started being interested in healthy nutrition and losing body fat, I was shocked to learn how many calories the chocolate chip cookies have. The reason for this is the high amount of fats (in store bought cookies, very unhealthy fats) and all kinds of industrial sugar. Indeed I was trying a lot of recipes before I developed a recipe without butter, but still very chewy cookies. Instead of butter I use a combination of coconut oil and tahini and the cookies turn out crispy on the outside but chewy inside.
Sugar free and naturally sweet
Moreover it was difficult to develop a recipe without refined sugar. Obviously instead of sugar I am using date paste which is very easy to prepare. You need dates and hot water, let them soak for some time and blend. This adds a lot of natural sweetness to the cookies, still making the taste of other ingredients come through.

Ingredients
- 100 g dates
- 120 g hot water
- 35 g tahini
- 30 g coconut oil
- 160 g rice flour*
- 5 g baking powder 1 teaspoon
- a pinch of salt
- 20 g sugar free chocolate chips*
Instructions
- Pour 120 g hot water over 100 g dates, leave them inside for at least 15 minutes, or longer.
- Mix the dry ingredients: 160 g rice flour, 5 g baking powder (1 teaspoon) and a pinch of salt.
- After 15 minutes blend dates together with water (do not drain the water) in a blender to get date paste.
- In a blender, add 30 g melted coconut oil* and 35 g tahini*, mix.
- Pour wet ingredients into flour with baking powder, knead the dough.
- Heat the oven to 200 C / 390 F. Form 8 round balls with your hands and place them in the slightly fatted baking tin. Take a fork (or a glass) and flatten the balls, so they have a form of round chocolate chip cookies. As this healthy chocolate chip cookie recipe does not contain any butter the cookies will not spread in the oven, so you have to do it with a fork, before you put them into the oven.
- Sprinkle 20 g chocolate chips on top and push them inside with a fork, so they stick to the dough.
- Place the baking tin in the oven at a level higher than the middle rack and bake at 200°C/390°F for 15 minutes. Take cookies out of the oven and let them chill for 10-15 minutes. They are still soft and need some time to develop their full flavor.

Tips & hacks for the recipe
*Do not change rice flour to other types of flour. Rice flour gives cookies a buttery structure that is normally achieved by adding a lot of butter. This is an amazing way to get crispy cookies with low calories!
*You can use regular chocolate chips, not necessary sugar free chocolate chips. But then your healthy chocolate chip cookies will not be sugar free, as I specified in this recipe. They will still be low calorie though, since these healthy chocolate chip cookies recipe itself is very low in calories and consists only of healthy ingredients.

*You can do it in the microwave or over hot water. You can put coconut oil in the microwave and heat it for 10 second intervals. Do not forget to cover it. Coconut oil melts very fast. You will need 2-3 intervals or less to melt it. You can also pour some hot water into the pot and place a jar with coconut oil over it. Wait 2-3 minutes and coconut oil is melted.
*Make sure that the tahini you add is soft and pretty fluid. Mix the jar with tahini, so oil and tahini paste combine and tahini has a soft and pretty fluid structure.

Chocolate chip cookies are pretty unhealthy, because they contain white flour, butter and a lot of sugar. However you can make a healthy version of cookies at home. In addition to using coconut oil and butter in the recipe, you can use less sugar and high quality chocolate.
Surprisingly, in supermarkets, it is difficult to find cookies that do not contain any sugar, butter and white flour. Therefore, it is better to make cookies at home.
