The yummy lasagna – easy & incredibly tasty
This spinach lasagne recipe is incredibly easy and quick. It contains white creamy sauce, spinach, tomato sauce and is topped with melted cheese. I love preparing lasagne in advance, because you can keep it in the fridge for some days and enjoy a quick lunch or dinner at hand. You will obviously need 10 minutes to warm it up, but certainly in this short time you get a speedy healthy lunch or dinner.
The quickest tomato sauce – ready in 1 minute
Preparing tomato sauce for lasagne always takes time and this is exactly what makes lasagne so time-consuming. That is why, to speed up the process you will only need 1 minute to make the tomato sauce in this recipe. In addition, you will only need very simple ingredients. You add all the ingredients to a blender and blend them together. Furthermore, no need to heat them up or cook!
Frozen or fresh spinach?
I love using frozen spinach in a lasagne recipe. You definitely can save some time using frozen spinach, because you do not need to wash and dry spinach leaves. Except for this, frozen spinach is always at hand, you can store it in the freezer and use it whenever it is time for a lasagne recipe.
Lower in calories, still incredibly creamy
In most cases lasagna is prepared with white bechamel sauce and bechamel is not easy to make. Except for the complicated cooking process, you need butter, milk and flour to make it. Furthermore these ingredients are the reason why lasagne is high in calories. Instead of making bechamel sauce, I developed an easy spinach ricotta sauce. In fact it is really easy to make, adds protein to lasagne and makes it lower in calories.

Ingredients
Spinach white sauce:
- 450 g frozen spinach
- 250 g ricotta
- 100 g onion
- 15 g oil
- 2 cloves garlic
- ½ tsp black pepper
- ½ teaspoon salt
- ⅓ teaspoon nutmeg
- 70 g water
Tomato sauce:
- 250 g passata or tomatoes in their own juice
- 50 g bell pepper
- 50 g sun-dried tomatoes
- 70 g water
- 1 clove garlic
- ½ teaspoon of salt
- ½ tsp black pepper
Topping:
- 150 g mozzarella coarsely grated mozzarella
- 200 g lasagna 9 sheets
Instructions
- Let’s prepare spinach white sauce first: add 15 g oil to a pan and fry 100 g onion, 2 garlic cloves for 5 minutes, remove the garlic after frying.*
- Add 450 g frozen spinach. Fry under the lid on medium heat until spinach is thawed and cooked. Stir occasionally. Bring to a boil, add 250 g ricotta and spices (½ tsp black pepper, ½ teaspoon salt, ⅓ teaspoon nutmeg).
- Bring to a boil, stirring constantly, add 70 g water. The sauce is ready.*
- Let’s prepare red tomato sauce: blend all the ingredients in a blender: 250 g passata or tomatoes in their own juice, 50 g bell pepper, 50 g sun-dried tomatoes, 70 g of water, spices (1 clove garlic, ½ teaspoon of salt, ½ tsp black pepper). The sauce is ready, no need to cook or warm it up.
- Preheat the oven to 190 C / 375 F. Let's create lasagne:
- Put in a baking form following layers*Red tomato sauce (1/2), Lasagna sheets, Spinach white sauce, Grated mozzarella cheese, Lasagna sheets, Spinach white sauce, Grated mozzarella cheese, Lasagna sheets, Spinach white sauce, Grated mozzarella cheese, Lasagna sheets, Red tomato sauce (1/2), Grated mozzarella cheese
- Cover the form with foil.
- Bake at 190 C / 375 F on medium level for 25-30 minutes. 15-20 minutes under foil and then remove the foil and bake for 10 minutes.
Notes
*We use garlic just to add some flavor, no need to leave it inside.
*I have young spinach, in which the leaves are small. If your spinach has large leaves, it is better to blend it together with the ricotta in a blender after the spinach has boiled.

To make spinach lasagna, you need lasagne sheets, grated cheese and 2 types of sauces (red tomato sauce and white creamy sauce). Without a doubt you can use both fresh and frozen spinach. In fact, using frozen spinach speeds up the cooking process. To prepare lasagne, layer in a baking form: first sheets of lasagna, then red tomato sauce and finally white sauce. Sprinkle it with cheese. Bake in the oven.
In my recipe I use spinach ricotta sauce instead of bechamel sauce. As a result this speeds up the process and makes the preparation easier.
For spinach lasagna you need following ingredients:
– fresh or frozen spinach
– onion
– lasagna sheets
– passata or tomatoes in their own juice
– grated mozzarella cheese
– nutmeg, salt, pepper, garlic and other spices you like
You can make lasagne ahead of time and freeze it. Obviously, you can freeze both raw (layered, but not baked) and already baked lasagna.
In general, lasagna is the most delicious immediately after baking. Therefore, you can prepare several servings at once, bake them and freeze immediately after baking.
Store ready lasagna in the refrigerator for up to 3 days. In addition, you can heat it in the microwave or oven.
You can freeze spinach lasagne. Indeed, there are two ways to do it. First is to freeze already baked lasagna. Or the second is to freeze layered lasagne that was not baked.
If you want to freeze baked lasagna, cool it after baking, cut into servings, wrap in cling film (to prevent it from drying out) and place in containers suitable for freezing.
However, if you want to freeze layered, but not baked lasagne, wrap unbaked lasagna in cling film and store it in the freezer in a baking form.
For freezing, it is better to make lasagna with fresh spinach.
In brief, reheat lasagna in the microwave for 3-5 minutes or in the oven for 10 minutes (until the middle of the lasagne is heated through).
To make lasagne both fresh and frozen spinach can be used.
To make spinach lasagne it is better to use mozzarella cheese, because it melts really well.
Lasagne should have several layers to be juicy and filling. Therefore use at least 4-5 layers.
Unquestionably spinach lasagna is prepared with special lasagne sheets. But as an alternative, you can try using pasta.
In a classic lasagna recipe a white bechamel sauce is used. Nevertheless to speed up the process, it can be replaced with spinach and ricotta sauce. Check my recipe for step by step preparation.
A white sauce for vegetarian lasagne, called bechamel, is prepared using butter and milk. Indeed, you can also use oat milk.
In my recipe, I make a white sauce by adding ricotta to the spinach. Obviously this makes the preparation quicker and easier.
