Mini pancakes – dutch baby – sweet and soft
Mini pancakes can be made with any filling you wish – I really love adding some fruit and nutella to them.
The best is to bake mini pancakes in muffin forms – but if you do not have them, just use a regular baking form. You can cut a dutch baby into servings after baking.
The recipe is incredibly quick – for pancake mixture you just mix all the ingredients together, the baking time is around 35 minutes (depending on your oven) and you get a perfect dessert! Perfect if you want to meal prep for your week (more meal prep recipes here) or if you are in the mood for something sweet and do not want to spend a lot of time baking pancakes in a pan.

- 1 Blender or Mixer
Ingredients
- 180 g flour
- 310 g oat milk
- 3 eggs
- 3 g salt
- 8 g vanilla sugar*
- oil
Instructions
- Preheat the oven to 200 C / 390 F.
- Mix 180 g of flour, 3 eggs, 3 g of salt, 8 g of vanilla sugar* and ⅔ of oat milk (around 205 g).
- Stir with a whisk so that there are no lumps, then add the rest of the milk (105 g). The mixture should turn out homogeneous, like a pancake mixture.
- Grease muffin forms* and place them empty in the preheated oven (200 C / 390 F) for 5 minutes to warm up. Fill the forms with the mixture, place in the oven.
- Bake for 30-35 minutes. First 15 minutes at 200 C/ 390F, then lower the temperature to 170 C / 340 F and bake for 20-15 mins to dry the buns.
- Do not open the oven during baking!!!*
- Can be served with sweet or salty fillings. I added some nutella and strawberries.

*Add 10 g of maple syrup, if you like it it is really sweet. I did not add any.
*I use silicone muffin molds and they are so good, because the batter (not only in this recipe) does not stick to the form.
*This is really important, if you open the oven the mini pancakes could not rise.
