Salad bowl – fresh veggies to feel healthy and light

This healthy salad bowl recipe combines so many different fresh veggies – cucumber, rucola, spinach, red onions. You literally eat a rainbow! I really love the combination of cheese and fruit. Adding strawberries and feta cheese to this bowl makes it sweet and salty at the same time. To add more carbs, that keep you full for a longer period of time, I cooked some bulgur. Feel free to add any grain you like – quinoa, couscous, buckwheat.

The recipe is full of protein and for lunch or dinner it is really low in calories. To consume under 500 calories for lunch or dinner is the best solution if you want to lose weight. But do not go too low – you still need to eat enough for your muscles to grow. If you restrict your calories too much your body starts to store fat. So eat enough food and reach your weight loss goals!

  • 1 Salad Spinner

Ingredients
  

  • 55 g feta cheese
  • 120 g strawberries
  • 170 g cucumber
  • 25 g arugula*
  • 75 g fresh spinach
  • 20 g red onions
  • 22 g uncooked bulgur 70 g cooked

Ingredients for a dressing

  • 8 g olive oil
  • 3 g whole grain dijon mustard
  • 15 g balsamico
  • 28 g greek yogurt
  • 3 g maple syrup

Instructions

  • Mix dressing first: 8 g olive oil, 3 g whole grain dijon mustard, 15 g balsamico, 28 g greek yogurt, 3 g maple syrup.

  • Wash and dry 25 g rucola*, 75 g fresh spinach, cut 120 g strawberries, 170 g cucumber, 20 g red onions. Add everything to a bowl and top with 70 g of cooked bulgur and 55 g feta. Pour dressing on top.

*You can substitute arugula for spinach or other salad, if you want.
