Everyone likes a perfect brownie – full of chocolate delight and a fudgy structure. This healthy low calorie version of your favorite brownie is very rich and fudgy and consists of healthy ingredients. It is very important to be careful during baking – do not overbake the brownie – so it stays fudgy and soft. Even if you have a feeling this brownie is undercooked – take it out of the oven on time – as it  tends to bake through, once you take it out. 

A piece has only 187 calories – so it goes perfectly with any fitness goals and you can enjoy it every day. You do not need any chocolate for this recipe – it is made with cocoa powder – so if you are in the mood for chocolate and do not have any at home and want to bake something that tastes like chocolate – this is your chance! Fudgy brownies consist only of natural ingredients. No refined sugar, only 187 calories and 7 g protein per piece. Fudge brownie recipe is easy to make and very fast. They turn out very fudgy, soft and melt in your mouth. Prepare them beforehand for chocolate delight, that will not stop you from reaching your health goals.

  • Turn on the oven to reach 180C (or 356F) before you put the fudgy brownie inside.* They will turn out more delicious, if you put them in the oven already warmed up.
  • Combine wet ingredients first: 210 g almond butter*, 140 g pumpkin puree*, 100 g maple syrup. Mix well.

How to make pumpkin puree (*also check my video in the tips section)

  • Combine dry ingredients next: 100 g coconut flour, 1 tsp vanilla sugar, 2 tsp baking powder, ½ tsp salt, 50 g cocoa powder. Mix all dry ingredients.
  • Combine wet and dry ingredients. Add 170 g water. Your mixture should be smooth and not too thick.
  • Then pour the batter into the baking form lined with parchment paper. Use a spoon to spread a batter in the baking form.
  • Bake at 180C (356F) for 20-25 minutes.* The baking time depends on your oven, so you have to check fudgy brownies if they are ready. Do not overbake them! I recommend baking max. 25 minutes and take them out as they still look raw.
  • Take fudgy brownies out of the oven and let them cool for 10 minutes before cutting them into pieces.
  • This fudgy brownie with all the ingredients above makes 12 big pieces. They have no refined sugar inside, consist of super healthy ingredients, have 7 g of protein without protein powder. They only have 187 calories and are a super snack to prepare beforehand to satisfy chocolate cravings.

Tips & hacks for the recipe

*Turn on the oven beforehand to have a temperature at 180C (or 356F) when you put fudgy brownies inside. If you put them in an oven that is not heated to this temperature, they could take longer or not reach the desired structure.

*I used brown almond butter and would definitely recommend it.

*To prepare pumpkin puree you can take 140 g frozen pumpkin pieces or fresh pumpkin cut into pieces. Put it into a covered pot, add 50 g water, cook for around 10-15 minutes for frozen pumpkin pieces and 20 minutes for fresh pumpkin pieces. Cook on a low heat and mix eventually. When pumpkin pieces are soft, transform into a blender and blend everything together. Your pumpkin puree should have no pieces inside. Check my video for pumpkin puree consistency.

*Your cake will look still raw the moment you take it out of the oven. If you wait too long it will be to caky and not soft and fudge like brownies. Do not ovebake it!
