This cheesecake consists of very simple ingredients and is incredibly tasty. It is low in calories, because instead of cream cheese we are using greek yogurt. I definitely recommend using yogurt with 10% fat or higher – your cheesecake will be creamy and soft. This recipe also contains a good amount of protein – if you are looking for a cake that will allow you to reach your protein goals easier, prepare it in advance and you will get an amazing fit snack during the week.

On top of the cake comes the best – melted white chocolate poured on the cake and making it a perfect satisfying delight. I recommend using white chocolate that is made for cakes – they are easier to melt and do not get watery like regular white chocolate. But you will not notice the difference in the taste, only in appearance, so if you only have white chocolate available and cannot find white chocolate for cakes in the baking department of the supermarket – just go for it.

Ingredients
  

  • 800 g greek yogurt 10% fat
  • 5 eggs
  • 80 g corn starch
  • 8 g vanilla sugar
  • 60 g maple syrup
  • 100 g white chocolate*
  • 40 g oat milk

Instructions

  • Mix 800 g greek yogurt (10% fat), 5 eggs, 80 g corn starch, 8 g vanilla sugar and 60 g maple syrup. Pour into baking form and bake for 1 hour at 170 C or 340 F. After 1 hour, turn off the oven, open it and leave a cake inside for 40 minutes to cool down. Take it out of the oven and let it cool 3-4 hours.
  • Break 100 g of white chocolate into small pieces, add 40 g of oat milk. Melt white chocolate together with milk.* Pour over the cake.

Tips & hacks for the recipe

*When you melt chocolate in a water bath, just melt half of it and turn off the heat. The rest of the chocolate will melt, covered with warm, already melted chocolate. Do not leave chocolate over the heat till it melts completely. It can become clumpy.
