This white chocolate muffins recipe is very quick and easy. If you are in a mood for a quick snack – just throw all ingredients together and bake them for 20 minutes. You will get sweet, creamy muffins – with melted chocolate inside sweetened with a little bit of maple syrup. These muffins are really low in calories and so you can have 2 or 3 of them as a snack during the day. I really like to bake them on Sunday as a meal prep and enjoy them during the week.
Every serving contains a good amount of protein, so it is great after or before your workout or just a snack if you are struggling to reach your protein goals.
The heart of this snack is a piece of white chocolate that is placed in the middle before baking and melts. This is incredibly tasty and will make your heart beat faster, if you are a white chocolate fan.

Ingredients
- 21 g cornstarch
- 3 eggs
- 6 g baking powder
- 42 g coconut flour
- 165 g quark cheese 5% fat*
- 30 g maple syrup
- 15 g white chocolate
- 20 g white chocolate cut into pieces
Instructions
- Blend in a blender 21 g cornstarch, 3 eggs, 6 g baking powder, 42 g coconut flour, 165 g quark cheese (5% fat)*, 30 g maple syrup and 15 g white chocolate.
- Pour half of the batter into muffin forms (6 forms) and cut 20 g of white chocolate into small pieces and place them into muffin forms in the middle. Pour the rest of the batter on top. Place into the oven and bake for 17 minutes at 200 C / 390 F. Check the middle of the muffins during baking – it depends on your oven how long you need to bake. If the middle is baked through – it is time to take them out.

*In this video I wrote cottage cheese instead of quark cheese. I had some difficulties with translation till I figured out that the correct translation is quark cheese.
