It is a perfect salad or even bowl, if you want to mealprep a lunch or dinner for the whole week. Moreover when everything for this salad or bowl is already prepared, you just need 5-6 minutes to warm it up and the lunch or dinner is ready! One more positive aspect about this recipe is that you do not have to spend hours in the kitchen even during mealprepping.
Regularly I prepare brussel sprouts for this bowl in advance. As brussel sprouts cook, I wash and cut greens and cucumber. Mix the dressing. You can fry your eggs in advance or fry them before eating – it is up to you.

Brussel sprouts salad is not only incredibly tasty, but really amazing for your body. It is loaded with greens and healthy fats, full of iron, vitamine C and K. It contains a lot of protein and after eating it you feel full for hours.

Ingredients
  

Ingredients for brussel sprouts salad (5 servings):

  • 1 kg brussel sprouts
  • 90 g soy sauce
  • 15 g rice vinegar
  • 20 g brown sugar
  • 18 g sesame oil
  • 2 tsp chili powder or fresh chili
  • 2 g garlic

Bowl:

  • 10 eggs*
  • 400 g salad any time you like
  • 400 g cucumber

Dressing (5 servings):

  • 40 g soy sauce
  • 45 g almond butter
  • 15 g water
  • 15 g maple syrup
  • 15 g lemon juice
  • 20 g sesame oil

Instructions

Prepare brussel sprouts according to my roasted brussel sprouts recipe.

  • In the meantime fry 10 eggs. Wash 400 g salad and 400 g cucumbers. Cut salad and cucumbers – I like to cut a cucumber into long and thin slices.

Prepare a dressing:

  • Mix 40 g soy sauce, 45 g almond butter, 15 g water, 15 g maple syrup, 15 g lemon juice and 20 g sesame oil.
  • For 1 serving, arrange on a plate: salad, cucumber, 1/5 of brussel sprouts and pour with 1/5 of dressing.
  • You can prepare the recipe for 5 servings (wash and dry a salad and a cucumber, prepare brussel sprouts and a dressing) in advance and enjoy it during a week.

Tips

*Do not put any salt on eggs or salad, because the dressing is pretty salty.
