Dates with peanut butter and jelly: great combination of flavors

The combination of peanut butter, jelly and chocolate makes this dessert incredibly delicious and natural. One more advantage is that the recipe is incredibly quick – you just mix raspberries and chia seeds, wait a little bit till it gets jelly like, put some peanut butter on a date, cover it with raspberries mixture and pour melted chocolate over it. You can eat this desert right away or put it in the fridge and wait till chocolate hardens. It is perfect for meal prep – you can prepare this recipe on the weekend and take it to the office or enjoy it at home as a delicious healthy snack.

Peanut butter and jelly dates combine a lot of great flavors in a healthy dessert. They are sweet and chewy because of dates, chocolatey and crunchy because of dark chocolate, tart because of raspberries.

Ingredients
  

  • 6 dates 42 g
  • 35 g peanut butter
  • 30 g frozen raspberries
  • 0.5 tsp chia seeds
  • 8 g dark chocolate
  • 12 g oat milk

Instructions

  • 6 dates cut in the middle and stuff with peanut butter. My peanut butter had small pieces of peanuts inside, you can cut peanuts into small pieces and add them to peanut butter too).
  • Take 30 g of frozen raspberries out of the freezer and let them defrost for 10 minutes. Add 0.5 tsp of chia seeds and smash everything with a fork. Let it cool for 10-15 mins. Stuff dates with a raspberries and chia mixture.
  • Melt chocolate in a water bath: put 8 g dark chocolate and 12 g oat milk in a heatproof bowl and place it over a pot with cooking water. Mix all the time and melt a half of chocolate, turn off the heat and continue mixing till all the chocolate is melted.
  • Pour melted chocolate over dates and let them cool down.
